Coconut & Psyllium Flatbread

Makes 6

INGREDIENTS
  • ½ cup coconut flour
  • 2 Tbsp psyllium husk powder
  • 45g coconut oil (or melted butter)
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 cup boiling water
METHOD
  1. Mix the dry ingredients together. Add the oil and blend well.
  2. Add boiling water and blend until a dough like mixture forms.
  3. Divide the mixture into 6 balls. Roll the balls between 2 sheets of baking paper and flatten out.
  4. Dry fry in a pan for 2– 3 minutes each side, until golden.
