Fruit 'n' Nut Muesli with Yoghurt

Serves 4

INGREDIENTS
  • 500g low-fat natural, vanilla or coconut yoghurt
  • 1 cup (250ml) fruit pureé
  • fresh fruit & nuts to top

Muesli

  • 2 Tbsp sesame seeds
  • 75g (¾ cup) rolled oats
  • 15g (¾ cup) puffed millet
  • 30g (¾ cup) bran flakes
  • 50g (¼ cup) sunflower-seed kernels
  • 70g (½ cup) sultanas
  • 45g (¼ cup) currants
  • 40g (¼ cup) slivered almonds
METHOD
  1. To make the muesli, place the sesame seeds in a small saucepan and toss over medium heat for 1 minute or until light golden and aromatic. Transfer to a large bowl.
  2. Add the rolled oats, puffed rice or millet, bran flakes, sunflower-seed kernels, sultanas, currants and almonds, and toss until well combined.
  3. Layer glasses with muesli, yoghurt and fruit puree. Top with a dollop of yoghurt, fresh fruit and nuts and serve immediately.
