Gluten Free Pastry Dough
INGREDIENTS
  • 1 cup rice flour
  • 1/3 cup buckwheat flour
  • 1/3 cup tapioca starch
  • ½ tsp xanthan gum
  • 125g chilled butter, chopped
  • 1 egg
  • 1 ½ Tbsp iced water
METHOD
  1. Place flours, starch, xanthan gum and butter in a food processor. Process until mixture resembles breadcrumbs. While still running, add egg and enough iced water so mixture just comes together.
  2. Turn out pastry onto a lightly floured surface. Knead into a ball.
  3. Use as desired or wrap in plastic wrap and refrigerate until required
