INGREDIENTS
- 1 cup rice flour
- 1/3 cup buckwheat flour
- 1/3 cup tapioca starch
- ½ tsp xanthan gum
- 125g chilled butter, chopped
- 1 egg
- 1 ½ Tbsp iced water
METHOD
- Place flours, starch, xanthan gum and butter in a food processor. Process until mixture resembles breadcrumbs. While still running, add egg and enough iced water so mixture just comes together.
- Turn out pastry onto a lightly floured surface. Knead into a ball.
- Use as desired or wrap in plastic wrap and refrigerate until required
