Gut Healing Morning Porridge

Serves 2

INGREDIENTS
  • 1 cup rolled oats
  • 2 cups water
  • 1 tsp fenugreek seeds
  • ¼ tsp ground cinnamon
  • ½ cup fresh berries (or ¼ cup dried)
  • 1 tsp slippery elm powder
  • ¼ tsp sea salt
  • 2 tsp ground flax seeds
  • 3 Tbsp yogurt, or kefir
METHOD
  1. Put oats, 1 cup water, fenugreek and 1 Tbsp yogurt or kefir into a pot. Sit covered overnight.
  2. In the morning, add remaining 1 cup water, cinnamon, berries, slippery elm, water and sea salt. Bring to a boil then simmer and cook 5-7 minutes.
  3. Top with ground flax seeds and remaining kefir and garnish with some fresh berries.
