Vegan Bolognese Sauce
INGREDIENTS
  • 1 cup textured soy protein (TVP)
  • ½ cup water
  • 4 Tbsp olive oil

Sauce:

  • 220g tomato purée
  • 1 ½ Tbsp nutritional yeast
  • 1 ½ tsp arrowroot powder
  • 2 ½ Tbs brown sugar
  • 1 ½ tsp salt
  • 1 large onion
  • 1 large tomato
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika powder
  • ½ tsp cayenne pepper powder
DIRECTIONS
  1. Add water and TVP into a bowl and let it soak for 5 minutes.
  2. Put all sauce ingredients into a separate bowl and stir until combined. Add the soaked textured soy protein into the sauce and let it sit for another 5 minutes.
  3. Heat olive oil in a pan on medium heat. Pour sauce and TVP into pan and let it simmer for 5 minutes, stirring occasionally, until it starts to gently bubble with heat.
  4. Serve immediately over pasta of choice.
